We are seeking a dynamic and experienced Executive Chef who loves a challenge and thrives on hard work to oversee the kitchens across 2 iconic sites. Our superb venues operates a range of individual retail offering, large scale events, catering functions, weddings and conferences. This role is based in Melbourne's CBD.

In this role you will showcase your talents in a centralised production kitchen, managing a culinary team of up to 4 head chefs, chefs and cooks and you will oversee our culinary operations across multiple retail and function venues.

Key Duties

  • Plan, supervises, monitor, and evaluate the food production and menu based catering
  • Successfully managing, mentoring and developing a kitchen team including head chefs, kitchen hands, cooks, chefs and logistics.
  • Deliver to our client's and customers high expectations of a premium experience
  • Controlling stock, preparing budgets, operating within strict budgetary constraints
  • Be accountable for food production of various areas, in accordance with timing requirements
  • Champion the significance and accurate implementation of allergy awareness controls
  • Maintaining a high standard of food hygiene, safety, infection control and cleanliness in accordance with Compass food safety program.

The Person

  • Chef trade's qualification with a of 5 years in a comparable multi retail and function venue environment.
  • Proven ability of Large Scale High End Functions.
  • Drive, personality creative flair and a passion for food
  • Experience in leading, mentoring and developing teams
  • Experience developing and delivering concepts for multiple retail offers
  • Exceptional communication skills
  • Must have experience in menu development and costing
  • Training and/or accreditation in OH&S and Food Hygiene
